Power Balls

INGREDIENTS

  • ¼ cup cacao nibs (you can get the ones sweetened with stevia if you want)

  • ¼ cup shredded unsweetened coconut

  • 1 tablespoon coconut oil, melted then cooled (or use liquid cooking coconut oil)

  • ¼ cup almond flour

  • 8-10 Medjool dates, pitted

  • ¼ cup sunflower butter

  • ¼ cup hempseeds

  • 1 tablespoon chia seeds

  • ¼ teaspoon Himalayan pink salt

  • 1 teaspoon cinnamon

DIRECTIONS

  1. Place the cacao nibs and shredded coconut into a food processor and mix until well blended.

  2. Place the remaining ingredients into the processor and blend until evenly mixed.

  3. Roll mixture into balls (should make around 12).

  4. Roll the balls individually in cacao nibs, shredded coconut or hemp seeds.

  5. Chill for an hour or freeze up to 2 weeks.
