Power Balls

INGREDIENTS

¼ cup cacao nibs (you can get the ones sweetened with stevia if you want)

¼ cup shredded unsweetened coconut
-
1 tablespoon coconut oil, melted then cooled (or use liquid cooking coconut oil)

¼ cup almond flour
-
8-10 Medjool dates, pitted
-
¼ cup sunflower butter
-
¼ cup hempseeds
-
1 tablespoon chia seeds
-
¼ teaspoon Himalayan pink salt
-
1 teaspoon cinnamon
DIRECTIONS

Place the cacao nibs and shredded coconut into a food processor and mix until well blended.

Place the remaining ingredients into the processor and blend until evenly mixed.

Roll mixture into balls (should make around 12).
-
Roll the balls individually in cacao nibs, shredded coconut or hemp seeds.
-
Chill for an hour or freeze up to 2 weeks.
